From monks to distilleries – the birth of whiskey on the Green Island.

Like all successful stories, the history of Irish whiskey combines equal parts of inspiration and adversity, and eventually ends in triumph.

Ireland first became acquainted with the art of distilling grain more than a thousand years ago thanks to missionary monks returning home from their wanderings. During the hard times of wars and religious raids, the monasteries of the Green Island were reliably protected from most conflicts. Their safe condition allowed the monks to experiment with methods of distillation and cultivation of grain used in fermentation, creating a new product – «Aqua Vitae» (water of life).

Over the years of existence, the production of Irish whiskey has survived ups and downs. In the middle of the XIX century, it was considered one of the most respected and revered drinks, and these times are the golden age of distillate. Ireland dominated the world sales of whiskey, without revealing the formula for the success of the product.

Distilleries keep secret the details of the distillation process, which give Irish whiskey its mild taste, beloved all over the world.

Ireland – the highest level of the art of distillation

Kerrighan's is an Irish whiskey that reveals the relationship between local culture, family traditions, home, and one goal.

The East coast of Ireland was inhabited long before the art of distillation was born there. In the XII century a Norman fortress was founded on the shore of Dundalk Bay, which became the northern outpost of the country, and later a major city and a center of distillery.

Dundalk was ideally suited for the successful development of the distillery industry due to access to the purest water from springs located in the nearby Cooley Mountains. The XIX century was the heyday of the city and the active development of distilleries and, as a result, trade; the population of the city grew.

At that time one of the many local family clans of Dundalk were the Kerrighan’s family, whose main business was the production of whiskey. The clan grew, production increased, and the sales geography of the family whiskey expanded.

The national character of the inhabitants of the island allowed Kerrighan’s family to remain faithful to the quality of its product for centuries, using a historical recipe for distillate production. With special pride, they expressed their devotion to their country and the origin of the spirit, using the shamrock emblem, the symbol of Ireland, on their whiskey.

Production process

Irish whiskey reflects the national character

To be an Irish whiskey, Kerrighan's does not forget about the traditions of the island.

Natural water, which is the basis of whiskey, is a special pride of the Irish. it is water that largely determines purity of the taste of the finished drink.

The second important ingredient of Irish whiskey is barley, which undergoes several levels of preparation before it is used in production process: soaking, germination and grinding.

Combining, water and barley – two natural components - start the process of converting starch into sugars. With the addition of yeast, the mash undergoes further metamorphoses, turning sugar into alcohol.

It's time for the main process – distillation, which is carried out three times to produce Irish whiskey. As a result, we can see the various taste styles of distillate, which are enhanced and acquire additional flavors with aging and maturation in 200-liter oak barrels.

To be classified as Irish whiskey, the spirit must stay in barrels for at least 3 years.

Cocktail with Kerrighan’s Irish Whiskey

The New Yorker – an iconic cocktail that does not lose it is relevance.
Ingredients:
50ml Kerrighan’s Irish Whiskey
50 ml Angostura bitter
30 ml Orange zest
25 ml Lemon juice
2 ml Grenadine
Ice cube
Instructions:

Mix Kerrighan’s Irish Whiskey, lemon juice, grenadine, and Angostura bitter in a shaker. Fill the shaker with ice cubes and beat. Pour through a strainer into a chilled cocktail glass and garnish with orange zest.
